Love couscous - I use the instant one too with pine nuts!

I've never heard of a couscoussier!

This is such a great option for getting good food on the table fast. It is a perfect base for stews or even a chunky pasta sauce. And don't forget that it makes a wonderful cold salad with some dried apricots, diced cucumbers, scallions, maybe some cherry tomatoes and a light vinagrette. I've had a few riffs on that courtousy of Lydia and the Ninecooks in the past.

I've mostly used the Near East brand of couscous. What other brands do readers recommend?
And what happened to Angeline, Jessica?


I like couscous a lot and also instant bulgur. Many dishes I used to serve with rice now I serve with one of them, cause it's even easier. So I replace fried "rice with chicken" with "chicken pilaw".

My favourite spices for couscous are turmeric (nice color!) and cumin. And since today, pine nuts and cinnamon.


Scholli, welcome to The Perfect Pantry. I've been experimenting with couscous more often lately, too -- it takes so well to either sweet or savory flavorings. I love the larger Israeli couscous too -- have you tried it?

I must admit that I only know the one which is sold by our local supermarket. But thank you for your hint, I'll try to get it..

Scholli, the Israeli couscous is larger, more like the size of tapioca pearls. The texture is great with chunky-style salads (corn, tomatoes, vegetables, etc.). Hope you can find some locally; if not, let me know and I will be happy to send it to you.
