Serves 6-8.
1-1/2 cups mayonnaise
1 clove garlic, minced
1 Tbsp Dijon mustard
1 tsp anchovy paste, or 2 anchovy fillets, minced
1/4 cup grated Parmigiano-Reggiano cheese
Salt and black pepper, to taste
Combine all ingredients in a large bowl, and stir well. Cover and refrigerate for 1-4 hours, to allow flavors to combine.
